What is a Proxy and how does it differ from non-alcoholic wine?
„Proxy wines are not dealcoholized wines - nor do they aim to be. They are independent creations, inspired by wine but reimagined. Instead of removing alcohol, they are composed from the very beginning: tea infusions, fruit extracts, herbs, spices, and sometimes fermented elements come together to create a drink that, in structure, depth, and aroma, is strikingly reminiscent of wine - but usually without using grapes at all.
The play with acidity, texture, tannins, and length is at the center. The best proxy wines achieve exactly what great wines can do: they accompany food, open up flavors, stimulate the palate - and tell their own story.

Why are proxy wines considered a special non-alcoholic alternative to wine?
Through fermentation, extracts, and infusions, proxies develop a depth, structure, acidity, and tannin balance similar to classical wines - yet with a completely unique identity. They are not merely a substitute, but a conscious decision for enjoyment without alcohol.
When and with which dishes does a proxy pair best?
Proxies are versatile food companions:
VIREO pairs beautifully with spicy, citrusy and summery dishes, as well as with fish, poultry and mild cheese.
PURPUR pairs beautifully with red meat, mushroom dishes, chocolate, pumpkin and savory cheese.
But when it comes to food pairings, there are no limits.
Where do the ingredients for SIUS proxies come from?
We source most of our ingredients from carefully selected dealers and producers in Austria and Germany, with whom we work closely.
Our tree needles we collect ourselves in the forest. Producers and suppliers are chosen with great care to ensure that our ingredients are always of the highest quality.
Why are SIUS proxies not organic certified?
We work with dealers and producers from Austria and Germany and already use almost exclusively ingredients of organic quality.
The only exceptions are our woods and our tree needles. Since the needles come directly from the forest, they cannot be certified organic. However, we are continuously working on moving everything possible towards certified organic quality.
Are SIUS proxies vegan?
Yes. Our proxies are entirely plant-based and contain only tea, herbs, fruits, woods, and spices.
Are SIUS proxies completely alcohol-free?
Yes. Although the kombucha fermentation produces trace amounts of alcohol (similar to bread or apple juice), we ensure that our proxies are classified as alcohol-free and can be enjoyed without concern.
Why are SIUS proxies cloudy?
The cloudiness is a mark of quality. It results from natural fermentation and the botanicals used. We deliberately avoid filtration to preserve aroma, depth, and complexity.
